  1. GF Choc Fudge Brownies

    These are delicious and my (non-scientific!) research has shown that most people would not know they are GF and generally agree they taste amazing. They are not a health food and I sometimes half the mixture to make less.

    Ingredients:
    180g butter, chopped
    150g chocolate (dark or milk as per your preference)
    150g plain GF flour
    70g cocoa powder
    1/4 tsp gf baking powder
    330g caster sugar
    2 eggs, beaten

    Method:
    Preheat oven to 200c

    Combine butter and choc in heatproof bowl and melt in mircowave or over a pan of boiling water.
    Sift together the flour, cocoa powder and baking powder. Stir in caster sugar.
    Add the choc mix and eggs to the dry ingredients and stir until just combined.
    Spread into tray lined with parchment paper.
    Bake 25-30mins. It will still be soft in the centre at the end of cooking time, if you prefer a less soft brownie, cook for longer.
    Place in fridge immediately.
    Best kept refrigerated and they are suitable for freezing.
